The last thing you want is for your RV trip to be stressful, which is exactly why you need a few RV camping recipes that are easy and delicious for any given night that you’re on the road. It’s no secret that, even if you’ve got a full kitchen in your RV, that you don’t have tons of cooking space – and these recipes keep that fact in mind.
With these meals in your back pocket, planning lunches and dinners will be that much easier, and you can make sure your family stays fed (and happy) without breaking your back or the budget.
These meals are more than just cereal and macaroni and cheese. We’re going to keep it simple but creative and tasty, too.
One-Pot Stovetop Lasagna
When you think of lasagna, you probably think of an all-day ordeal – but not this time. This lasagna’s prep time only takes five minutes, its cook time is only 20 minutes, and it offers 3-4 servings of Italian goodness.
Ingredients:
- 8 oz box of lasagna noodles, broken into fourths
- 12 oz jar of spaghetti sauce
- ¾ cup water
- ¼ tsp salt
- 4 oz provolone cheese
- 2 ½ oz shaved parmesan cheese
Instructions:
This recipe works best when you use a 5-quart pot. In that pot, mix your spaghetti sauce, water, and any fresh vegetables or pre-cooked meat you choose to use. After that goes in, top it with a layer of spaghetti noodles.
Cover those noodles with the rest of the sauce and the noodles that you have left, then add ¼ cup of water to the spaghetti sauce jar, give it a shake, and stir it carefully into the pot.
From there, bring the mixture to a boil and reduce the heat to low. Cook for 20 minutes while it’s covered and stir it to make sure the noodles don’t stick together. Once the noodles are at your desired softness, take the pot off the stove and stir in half the provolone cheese and half of your shaved parmesan cheese. After that, top the mixture with the rest of your cheese and wait about five minutes to let the cheese melt.
Chicken and Rice
There’s nothing more comforting than chicken and rice at the end of a long day; it’s the perfect meal to settle you and your family into a relaxing night. While everyone has their own idea of what’s best for their version of this recipe, we like to work with red sauce, diced tomatoes, and a little bit of spice.
Ingredients:
- 4 chicken thighs (the skin can be on or off)
- 1 cup rice
- 16 oz can of tomato sauce
- 16 oz can of diced tomatoes
- 3 oz can of tomato paste
- 1 cup water
- Chopped veggies of your choice
- Italian spice mix
Instructions:
Find an oven-safe baking dish, mix all of these ingredients together inside it, then bake it for 25-30 minutes at 350 degrees. That’s all you need to do for this savory meal.
Tortellini and Smoked Sausage
This dish is easily made in just one pan, and it makes three servings of pasta deliciousness. The best part is, prep and cook time is only 10 minutes!
Ingredients:
- 1 tablespoon of olive oil
- ½ pound package of smoked sausage (cut into 1/4-inch rounds)
- ¼ cup diced white onion
- ½ clove minced garlic
- 20 oz package of cheese tortellini
- 28 oz can of crushed tomatoes
- ½ cup chicken broth
- Salt and pepper
- 1 tablespoon cream cheese (at room temperature)
- ½ cup shredded sharp cheddar cheese
- ½ cup freshly shredded cheddar jack cheese
- Chopped fresh parsley
Instructions:
To start off, heat up the oil in a large skillet. Add in the onion and stir until it’s soft, then add the garlic and stir for 30 seconds. After that, stir in the sausage and cook it until it’s brown on both sides.
Once the sausage is browned, add the chicken broth, tortellini, and tomatoes. Use your salt and pepper for seasoning, then bring this mixture to a boil and cover it so it can simmer for 15 minutes or so (until the pasta is tender). While it’s simmering, stir it to keep the tortellini from sticking together.
After the 15 minutes are over, remove the skillet from heat and stir in both kinds of cheese (but don’t forget to set a handful aside for garnish!). Let it sit for 10 more minutes, or broil it for 3 minutes to brown it, then garnish with the fresh parsley and remaining cheese.
Cajun Sausage and Shrimp
If you and your family prefer a kick of flavor, this is the perfect dish to get your taste buds going. It only takes five minutes to prepare and 15 minutes to cook, so even the most impatient group will enjoy this quick and easy meal.
Ingredients:
- ½ lb large shrimp (peeled and deveined)
- 2 Andouille sausage links (thinly sliced)
- 1 medium zucchini (thinly sliced)
- 1 medium-sized red bell pepper (thinly sliced into strips)
- 2 medium shallots (thinly sliced)
- 2 tbsp olive oil
- 1 tbsp Old Bay seasoning
- Chopped parsley for garnish
Instructions:
Mix your shrimp, sausage, zucchini, red pepper, and shallots together in a big bowl, then add olive oil and Old Bay seasoning before stirring to coat the mixture.
Heat up a 12-inch cast iron skillet on medium-high heat, and add the ingredients once the skillet is hot. Sauté anywhere from 10-15 minutes (or until the shrimp is cooked thoroughly and the vegetables are softened). After it’s ready, garnish with your chopped parsley.
Mexican Chicken Taco Skillet
While this dish takes a bit longer than the previous choices, the end result is completely worth it. If you’re looking for a way to jazz up taco Tuesday, try out this taco skillet – it’s sure to become a crowd favorite.
Ingredients:
1 tbsp olive oil
¼ diced onion
½ lb chicken thighs (cut into small pieces)
½ of a taco seasoning packet
14 oz diced tomatoes
11 oz drained Mexicorn
¾ cup Jasmine rice
1 cup chicken broth
3 oz shredded Colby jack cheese
Nacho cheese flavored Doritos
Taco toppings of your choice
Instructions:
Heat up your oil in a large skillet on medium-high heat, then add the onion and chicken. Cook until the chicken is brown and the onion is tender, then stir in the taco seasoning and undrained diced tomatoes. From there, add the Mexicorn, white rice, and chicken broth and bring to a boil. After it’s reached a boil, reduce the heat and let it simmer while covered for about 20 minutes (or until the rice is cooked), stirring 10 minutes in.
After the 20 minutes is up, sprinkle the cheese on top and cover for another 2-3 minutes until the cheese is melted. Remove from the heat and garnish with Doritos and additional taco toppings.
Campfire Beans
Campfire beans have been the go-to meal for RVers and campers for generations. They’re the perfect solution for a cozy night around the fire – and the best part is that you don’t need a full RV kitchen (or, really, a kitchen at all) to whip them up.
Ingredients:
1 cup habanero sauce or barbecue sauce, your preference
2 16 oz cans of pinto beans
1 tbsp mustard
¼ cup diced sweet onion
Instructions:
Mix all of these ingredients together in your choice of a dutch oven, cast iron skillet, or aluminum baking pan. Stir until they’re nice and mixed, then place your mixture over the campfire. Keep it over the flames and cook for about thirty minutes, or until it starts simmering. Then, enjoy!
